Zhang is a data scientist with a background in food science. His research focuses on developing data infrastructure and data-driven methods for applications in food science, including AI in food systems, food informatics, and related areas such as mycotoxin elimination and food risk assessment. He has authored or co-authored publications including “Elimination of Fusarium mycotoxin deoxynivalenol (DON) via microbial and enzymatic strategies: Current status and future perspectives” (Trends in Food Science & Technology, 2022), “FRCD: A comprehensive food risk component database with molecular scaffold, chemical diversity, toxicity, and biodegradability analysis” (Food Chemistry, 2021), and several others on topics like 3D-QSAR models, food adulteration databases, and computational platforms for toxin biotransformation and enzymatic functions.
