About Taiwo
Dr. Taiwo Akanbi serves as a Senior Lecturer in the School of Science within the College of Engineering, Science and Environment at the University of Newcastle, Australia, in the Department of Food Science and Human Nutrition. He possesses a PhD in Food Chemistry and Biotechnology from Deakin University, Australia; an MSc in Food Biotechnology from Universiti Putra Malaysia; and a BSc in Food Science and Technology from a university in Nigeria. His global academic background across Africa, Asia, and Oceania has shaped his perspective on diversity and innovation in food science. Dr. Akanbi's career trajectory includes prior roles at Deakin University as Industry Research Fellow with lecturing responsibilities (2017–2020), Postdoctoral Research Fellow (2015–2017), Associate Research Fellow (2014–2015), and earlier as Research Assistant and Tutor at Universiti Putra Malaysia (2008–2010).
Dr. Akanbi's research specializations encompass food bioprocessing, with a focus on enzymatic generation of valuable products; encapsulation technologies for bio-functional nutrient delivery; and food waste valorisation, emphasizing recovery, stabilization, and utilization of high-value compounds from wastes such as winery byproducts and aquaculture residues. He supervises PhD, Masters, and Honours students on projects including extraction of bioactive compounds, stability of omega-3 fatty acids, and halal certification processes in food industries. Key publications include book chapters like 'Enzyme technology in the production of flavors and food additives' (2022), 'Enzymes in nutrition, baby foods, and food safety' (2021), 'High-Value Products from Cereal, Nuts, Fruits, and Vegetables Wastes' (2020), and 'Coacervation Technique as an Encapsulation and Delivery Tool for Hydrophobic Biofunctional Compounds' (2018). His scholarship has garnered over 2,500 citations from 81 publications. Dr. Akanbi has received an award for excellence in industry engagement and innovation, national and international research awards, and two Excellence Awards from the College of Engineering, Science and Environment in 2024, underscoring his impact on sustainable food processing and industry collaboration.
