Rate My Professor Jens Sloth

Sloth's research focuses on the presence, metabolism, bioavailability, and effects of toxic and essential trace elements and their chemical species in foodstuffs and biological systems. He develops advanced analytical methodologies for speciation analysis of trace elements using chromatographic separations coupled to ICP-MS detectors, with particular emphasis on arsenic species and the characterization of nanoparticles for food safety assessments. He advises authorities on trace element analysis and dietary exposure assessments. Key publications include "Pulsed electric field processing as an alternative to warm water treatment for the reduction of potentially toxic elements in Saccharina latissima" (Sund et al., 2026), "A novel approach for the identification of cadmium-chelating compounds in plant-based foods using SEC-ICP-MS/MS and SEC-QTOF-MS" (Cardini et al., 2025), "Combined effect of ultrasonication and ohmic heating on protein functionality of Cheddar cheese" (Altay et al., 2025), and "Effects of Ultrasound Treatment on Emulsifying Properties of Pea Protein Isolates Obtained from Four Different Pea Flour Varieties" (Dadi et al., 2025). Sloth is a member of CEN TC275 Working Group 10 on Determination of Trace Elements in Foodstuffs (1999–2001, 2005–present) and CEN TC327 Working Group 4 on Minerals and Contaminants in Animal Feedingstuffs (2005–present), and he contributes to the organising committee of the Nordic Conference on Plasma Spectrochemistry (2008–present). He has given public lectures on topics such as seasonal variations of protein and toxic elements in Furcellaria and post-harvest processing effects on sugar kelp.
